Minimalist Keto Christmas Menu

If you’re hosting Christmas dinner, just follow this delicious (and simple) menu and you can stick to your keto diet no problem. Plus, your guests won’t even miss the carbs.

This menu is truly minimalist…. no-fuss appetizer, main dish, veggie side dish, salad and dessert. If you like a more robust Christmas menu, fill in with your favorite keto side dishes or, better yet, ask your guest to bring their favorite dish.

Chili and Rosemary Roasted Nuts

I love having a simple keto appetizer on hand for when guests arrive. This is a keto - Whole 30 compliant recipe from The Real Food Dietitians that is quick and easy and can be made in advance. Cashews and almonds are flavored with chili powder, cumin, rosemary and lime juice, and then baked in the oven.

Want an easier keto appetizer? Just purchase a variety of raw or roasted nuts (just beware of sugar) and pour them in a decorative bowl.

 

Prime Rib with Rosemary Salt Crust

This is a simple recipe from Food Network’s Pioneer Woman, Ree Drummond. It features a flavorful crust with kosher salt, garlic, peppercorns, and fresh rosemary and thyme.

Prime rib is a universal favorite and it’s easy to prepare.

No need for gravy — I’ve included a flourless au jus recipe. Enjoy!!

 

Au Jus Recipe

Ingredients:

  • 2 teaspoons Worcestershire sauce

  • 1/2 cup red wine

  • 1 cup beef broth or beef bone broth

Directions:

After the prime rib is done, and the meat removed from the plan, place the roasting pan with its juices over stovetop burners on medium low. Whisk in the wine, and scrape up the little brown bits from the bottom of the roasting pan. Reduce slightly and add the beef broth. Bring to a simmer and reduce slightly. Serve along with the sliced prime rib.

Tuscan Style Roasted Asparagus

This recipe from Taste of Home elevates simple roast asparagus to a level worthy of a Christmas dinner table! It adds pretty red cherry tomatoes, pine nuts and Parmesan cheese.

Easy Keto Salad Bar

I love to have a mini (and super simple!) salad bar with a holiday meal. It’s as simple as opening a bag of prewashed salad greens (think romaine, butter lettuce, spinach, spring mix, kale, or mixtures of lettuce), and pop in a bowl.

Have a variety of keto friendly toppings so guests can build their own salad. Place toppings in small individual bowls, or use a divided veggie tray. I have an ancient Tupperware veggie tray I use, but there are inexpensive options on Amazon.

Here are a few keto salad topping suggestions, but let your imagination run wild:

  • bacon bits

  • blue cheese crumbles (or your favorite cheese)

  • chopped hard-boiled eggs

  • green, yellow or red bell peppers

  • red onions

  • shredded carrots

  • sliced radishes

Definitely take advantage of pre-washed and chopped veggies and toppings. Serve with your favorite full-fat salad dressing, or put cruets of extra-virgin olive oil and red wine vinegar on the table. I have this adorable stainless steel and glass set from Amazon.

Gingerbread Cream Cheese Pound Cake

Keto gingerbread for dessert? Yes, please! This recipe is from All Day I Dream About Food and can be made ahead of time which minimalists like me love! It’s made with almond flour and flavored with cinnamon, cloves, and ginger. Serve with a sugar-free caramel sauce or fresh whipped cream.

Note: I am overly cautious, but I like to inform guests if desserts are made with artificial sweeteners. Some people - like me! - are very sensitive to certain sugar-free sweeteners, so I always like to be upfront about the ingredients.

If you don’t want to bake, serve mixed berries with real whipped cream. That’s a perfect minimalist dessert!
