Creamy Keto Tomato Basil Soup

The tangy sweetness of the tomatoes is complemented by the subtle peppery notes of basil, resulting in a savory and comforting soup.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1/2 cup chopped onion
  • 1 tablespoon minced garlic
  • 28-oz can crushed tomatoes (San Marzano preferred)
  • 2 cups chicken bone broth
  • 1/2 cup heavy whipping cream
  • 1/4 cup chopped fresh basil, plus more for garnish
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic and sauté for 2-3 minutes until fragrant.
  3. Add crushed tomatoes and broth to the pot and bring to a boil.
  4. Reduce heat and let simmer for 10-15 minutes.
  5. Stir in heavy whipping cream and chopped basil.
  6. Use an immersion blender to blend the soup until smooth, or transfer it to a blender and blend in batches.
  7. Season with salt and pepper to taste.
  8. Garnish with additional fresh basil.
  9. Serve hot and enjoy!

Notes

For dairy-free, substitute full-fat coconut milk from a can for the heavy whipping cream.


If you can't find crushed San Marzano tomatoes, use peeled whole San Marzano tomatoes and squeeze them with your hands to crush them as you add them to the soup. Pureeing the tomato soup at the end will take care of any lumps. You can also use any crushed tomatoes.


If you don't have fresh basil, substitute 1 tablespoon plus 1 teaspoon dried basil.
