When I travel I love to eat Starbucks Bacon & Gruyere Egg Bites. They are a keto-friendly, satisfying breakfast or quick meal. I'm too cheap to eat them on the regular while at home (my local store charges $4.95 plus tax) so I have always consider Starbucks Egg Bites to be a treat or travel food.

Until I started making keto egg bites at home.

Making carnivore- and keto-friendly egg bites are super simple. Just toss a few ingredients in a blender, pour into silicone molds, and bake. They're not only cheaper than purchasing egg bites at Starbucks but, since you can control the ingredients, they have less carbs. Only 2 grams of carbs per 2 egg bites vs. 9 grams of carbs at Starbucks.

You can make these with Gruyere cheese and bacon just like at your local cafe, or use cheddar, Monterey Jack, Gouda, or whatever cheese you have on hand.

This Bacon Cheese Egg Bites recipe is keto-friendly.

One serving of Bacon Cheese Egg Bites (which is two egg bites!) has 202 calories, 2 grams of carbohydrates, 14 grams of protein, and 16 grams of fat.

As a reference, the Starbucks Bacon & Gruyere Egg Bites have 300 calories, 9 grams of carbohydrates, 19 grams of protein, and 20 grams of fat.

 
 

This Bacon Cheese Egg Bites recipe is perfect for a carnivore diet.

Not only are these egg bites keto-friendly, but they are also suitable for a carnivore diet.  This means they are made entirely from animal products. I do include a dash of hot sauce in the recipe (just like in Starbuck's version) which can be omitted if you eat strict carnivore, meaning no seasonings. All other ingredients besides salt and pepper are animal-based.

Equipment needed to make Carnivore Bacon Cheese Egg Bites.

You need just two pieces of equipment to make this Bacon Cheese Egg Bites recipe other than a set of measuring cup and spoons.

Blender.

A blender will puree all the ingredients to make a smooth-textured egg bites, just like the ones at Starbucks. Using a blender results in a more evenly cooked egg bite and it also makes the mixing process quick and easy.

You can use a whisk, but the egg bites will be lumpy from the cottage cheese and shredded cheese.

Egg Bite Molds.

I tried making egg bites in muffin tins but even when the pan is well-greased I found it hard to remove the egg "muffins" easily. So I invested in silicone egg bite molds and purchased them on Amazon.

This is the set I have and it cost about $18.

Silicone egg bite molds can be used in the oven or in an instant pot. I have always made egg bites in the oven and they come out perfectly.

Most egg bite molds come with a plastic lid and are dishwasher and freezer safe.

Eggs.

Eggs are the star ingredient in homemade egg bites because they provide the signature texture and flavor. They also help to bind the other ingredients together. Eggs are an excellent source of high-quality protein and provide essential nutrients such as vitamin D, choline, and minerals like selenium. Additionally, eggs are a good source of healthy fats and antioxidants.

Cottage Cheese.

Cottage cheese is used in this keto egg bites recipe because it provides a creamy and fluffy texture to the eggs. It also adds a subtle tangy flavor that complements the other ingredients well.

Gruyere or other shredded cheese.

If you don't have Gruyere on hand or prefer to use a different cheese, you can easily substitute cheddar, Monterey Jack, Gouda, or your favorite cheese.

Heavy cream.

I like to use a bit of heavy cream in my egg bites recipe because it adds richness and creaminess. It also helps to create a smooth and fluffy texture which makes these egg bites irresistible.

Bacon.

Everything is better with bacon!  Bacon adds flavor and texture to egg bites.  The saltiness and smokiness of bacon complement the eggs and other ingredients in the recipe.

Hot sauce.

There is just a dash of hot sauce in these keto/carnivore egg bites, mainly because Starbucks uses hot sauce in its recipe. Hot sauce adds just a bit of flavor, but the egg bites are not "hot" or spicy at all.

If you follow a strict carnivore diet and do not use seasonings, just omit the hot sauce (which is a plant-based food).

How to make Carnivore Bacon Cheese Egg Bites step-by-step.

Step 1: Preheat the oven and prep the silicone egg bite molds.

Fill a baking dish with hot water and place it on the bottom rack in the oven. Preheat the oven to 350 degrees.

The water in the baking dish will create steam and help to keep your egg bites moist.

Prepare the silicone egg bite molds by spraying with cooking spray or brushing the insides with melted butter or oil. Place them on a baking sheet for stability.

Step 2:  Assemble the ingredients.

Gather all ingredients. Shred the cheese, crumble the bacon, and measure the ingredients.

Step 3: Add all ingredients EXCEPT for the bacon, to the blender.

Set the crumbled bacon aside. You will add it to the molds after the egg mixture.

Pour all remaining ingredients into the blender. Puree for about 30 to 60 seconds until the egg mixture is smooth.

Step 4: Pour egg mixture into the prepared molds.

Carefully pour the egg mixture into the prepared silicone molds. Be sure to skip the center well! The egg bite in the center cooks slower than the others and it will be runny and underdone when the outside egg bites are cooked.

Sprinkle the crumbled bacon pieces evenly among the molds and press gently to slightly submerge some of the pieces.

Step 5: Bake for 20-25 minutes.

Carefully place the baking sheet containing the egg bites into the oven on the top rack. Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.

You can check for doneness by inserting a toothpick into the center of an egg bite. If the toothpick comes out clean, then the egg bites are done.

Step 6: Remove egg bites from the silicone molds.

Let the egg bites cool for 5-10 minutes before inverting the molds and removing the egg bites.

How do you store Keto Bacon Cheese egg bites?

You can store homemade egg bites in an airtight container in the refrigerator for up to 5 days. They can also be frozen for up to 2 months. I use these glass containers and purchase them on Amazon.

Both frozen and refrigerated egg bites heat up quickly and easily in a microwave oven.

How to reheat frozen egg bites.

Place frozen egg bites on a microwave-safe plate and microwave for 1-2 minutes until heated throughout.

How to reheat refrigerated egg bites.

Place refrigerated egg bites on a microwave-safe plate and microwave for 30 seconds to 1 minute until heated through. You can also enjoy them cold, straight out of the refrigerator!

Ingredients

  • 5 large eggs
  • ¾ cup shredded Gruyère cheese (or substitute Gouda, cheddar, or Monterey Jack)
  • ¾ cup (4% milkfat) cottage cheese
  • 1/4 cup heavy cream
  • ¼ teaspoon Redmond Real salt
  • ⅛ teaspoon freshly ground black pepper
  • ¼ teaspoon hot sauce, optional
  • 4 slices bacon, cooked and crumbled
  • Cooking spray, oil, or melted butter to grease molds

Instructions

  1. Fill a baking dish half full with hot water. Place on the bottom rack of the oven.
  2. Preheat the oven to 350°F with the baking dish of water inside.
  3. Prepare egg bite molds by spraying with cooking spray or brushing the insides with melted butter or oil. Place egg bite molds onto a baking sheet for stability.
  4. In a blender, combine the eggs, cottage cheese, shredded cheese, heavy cream, salt, pepper, and hot sauce. Blend until smooth, about 30 to 60 seconds.
  5. Pour the egg mixture into the outer wells of the egg bite molds (skipping the center wells) until about 2/3 full.
  6. Sprinkle crumbled bacon evenly among the molds and press gently to slightly submerge some of the pieces.
  7. Place the baking sheet containing the silicone molds into the oven and bake for 20-25 minutes or until the egg bites are set, slightly golden on top, and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let cool for 5 minutes before inverting the molds and removing the egg bites.
  9. Very carefully remove the baking dish with water from the oven and discard the water.
