I follow a carnivore diet and while I love chowing down on a juicy filet mignon topped with butter or gnawing on some tasty oven-roasted pork ribs, there are times I want something other than just meat. Can you relate?

This recipe is for crispy keto chaffles that can be eaten just like regular waffles (but without the carbs, flour, and guilt!), or they can be used as "bread" for keto or carnivore sandwich or burger recipes.

Like all of my recipes they are super simple to make and these chaffles have only 1 gram of carbs. They can be frozen for easy low-carb meal prep.

The term "chaffle" is a combination of the words "cheese" and "waffle," referring to a low carb waffle made with cheese and eggs. This chaffle recipe is not only delicious, but they are also low-carb and suitable for a ketogenic or carnivore diet.

Yes, Crispy Keto Chaffles are suitable for a ketogenic diet. Each chaffle (the recipe makes four servings) has 153 calories, 10 grams of protein, 12 grams of fat, and 1 gram of carbohydrates.

The Crispy Keto Chaffles recipe is perfect for a carnivore diet if you omit the vanilla extract. It is made from only animal products, like eggs, cream cheese, mozzarella cheese, and crushed pork rinds.

 

What equipment do I need to make keto/carivore chaffles?

To make Crispy Keto Chaffles, you will need a mini waffle maker, a mixing bowl, measuring cups and spoons, and a whisk or fork for mixing the ingredients.

I use the Dash Mini Waffle Maker which is under $10 and is available on Amazon. I've also seen it at Target and Walmart.

Dash also makes a Multi Mini Waffle Maker which makes four mini chaffles (or one entire recipe) at once. I wish I had seen this when I bought my waffle maker. They even have a Heart-Shaped Multi Mini Waffle Maker if you want to impress your friends, family, or yourself!

Ingredients used in Crispy Keto/Carnivore Chaffles.

Cream cheese.

Cream cheese is used in this chaffles recipe because it helps to provide a creamy texture and acts as a binding agent to hold the ingredients together. Additionally, cream cheese is low in carbs and high in fat, making it a great ingredient for those following a low-carb, ketogenic diet, or carnivore diet.

Mozzarella cheese.

Mozzarella is used because it is a low-carbohydrate cheese that melts well and helps to bind the ingredients together. Additionally, mozzarella has a mild flavor.

You can easily substitute your favorite shredded cheese. I've used cheddar and gouda with great results. The chaffles will take on the flavor of stronger cheeses. If you change up the shredded cheese, omit the vanilla extract.

Eggs.

Eggs are used in this recipe as a binding agent and to help hold the chaffle together. Eggs also add moisture and contribute to the texture of the chaffle.

Pork rind crumbs.

Pork rind crumbs are a "secret ingredient" in these keto/carnivore chaffles because they add a crispy texture and subtle flavor, while also being a low-carb and high-protein option. Additionally, they can act as a binding agent for the chaffle batter.

Vanilla extract.

Vanilla extract is used to add flavor and enhance the overall taste of the chaffles. It contains negligible amounts of carbs, making it a great ingredient for those on a low-carb diet. Additionally, vanilla extract is a natural sweetener, which can help reduce the need for additional sweeteners that may contain carbs.

I like using vanilla when I want a chaffle that is similar to an actual waffle recipe. Mild in flavor and just a hint of sweetness.

Vanilla extract should be omitted if on a strict carnivore diet, or if you are using a stronger cheese like cheddar, pepper jack, gruyere, or gouda.

 

How to make Crispy Keto Chaffles step-by-step.

Prepare and preheat a mini waffle maker.

Lightly spray the plates of a mini waffle maker with avocado oil or a neutral cooking spray if you follow a keto diet. If you are carnivore, brush the waffle maker plates with a bit of melted butter or bacon grease.

Preheat the mini waffle maker.

In a mixing bowl, beat the softened cream cheese until smooth.

I like to use a whisk to mix the batter. If the cream cheese is too hard you can pop it in the microwave for 15 seconds. Whisk the cream cheese until it is smooth.

Add the mozzarella cheese, eggs, and pork rind crumbs to the bowl, and mix until well combined.

Add the remaining ingredients to the bowl, and mix well.

Add 1 teaspoon vanilla if you follow a keto diet and like a slightly sweet, more traditional waffle taste.

Omit the vanilla if you are strict keto, or if you substitute a stronger shredded cheese for the mozzarella.

Scoop about 1/4 cup of the mixture onto the waffle maker, and close the lid.

The recipe makes about one cup of batter which will be four mini chaffles. I use a 1/4-cup measuring cup to scoop the batter so that all of the chaffles will be of equal size.

Cook for about 4 minutes or until golden brown.

Four minutes seems to be the magic time to cook the chaffles, and I set a timer on my phone or on my Apple watch. You can peek after 3 minutes. Cook until they are golden brown and hold their shape.

Carefully remove from waffle maker.

Use a fork to carefully remove the chaffle from the waffle maker. Both the chaffle and the waffle maker are very hot! I place the cooked chaffle on a cooling rack while I make the others so it crisps up nicely.

Repeat with the remaining mixture.

Continue scooping 1/4 cup chaffle batter and cooking the remaining chaffles.

Can you use carnivore chaffles batter to make pancakes?

You can use this exact keto chaffles recipe to make pancakes.

To do so, simply pour the batter onto a heated and greased griddle or pan, and cook until the edges start to dry and the top begins to bubble. Flip the pancake over and cook until it's browned. Serve with butter or your favorite low-carb toppings.

 

What can you serve with chaffles on a carnivore diet?

You can serve various types of meats, such as bacon, sausage, or steak, with chaffles on a carnivore diet. You can also add cheese, eggs, or a carnivore-friendly hollandaise sauce to complement the dish. Use 2 chaffles as "buns" for a grilled burger or other carnivore sandwich.

Chaffles can be stored in the fridge for up to 3 days and in the freezer for up to 3 months. To ensure the best quality, store them in an airtight container or plastic bag.

Reheating keto chaffles.

To reheat frozen chaffles, you can use a toaster, toaster oven, or regular oven. Simply place the chaffles in the toaster or oven and heat until they are crispy and hot. It is not recommended to use a microwave as this can make the chaffles soggy.
