BLT Deviled Eggs by Paula Deen

Here’s a perfect keto appetizer straight from Food Network personality, Paula Deen, with a fun twist - bacon! Crispy bacon and chopped cherry tomatoes are added to deviled eggs and make for a delicious pre-dinner bite.

Appetizer Make-Ahead Tips:

  • Hard boil your eggs a day or two in advance or purchase pre-cooked hard boiled eggs from your local grocery store. I use an inexpensive egg cooker to boil my eggs and the shell comes off with zero effort. My husband, who eats hard boiled eggs every single morning (boring!) probably loves our egg cooker more than he loves me and, as one who despises wrestling with peeling eggs, I shall forgive him. You can see our egg cooker and check the current price on Amazon here: Dash Automatic Egg Cooker

  • Make the deviled eggs the day before, but don’t add the bacon garnish until just before serving. It’s simple to make these eggs the day before Easter so they’re all ready to go. When ready to serve, add the bacon garnish so it stays nice and crisp.

Roasted Leg of Lamb with Mustard, White Wine & Tarragon Marinade by Alex Guarnaschelli

In my house, ham is the traditional Easter protein but this year I wanted to try something different, yet also traditional. I chose a Roasted Leg of Lamb recipe by Iron Chef and Food Network goddess, Alex Guarnaschelli.

If you’ve never roasted lamb before (and I hadn’t!) this recipe is designed for beginner cooks, it has a 5 star rating on Food Network, AND there is an instructional video along with the recipe so you can watch Alex create this amazing dish, start to finish.

She also makes a super simple gravy right in the roasting pan that is also perfectly keto.

You need a large roasting pan with rack.

Be sure you have a large enough roasting pan with a rack for the 6 to 8 pound leg of lamb. I use an extra-large nonstick roasting pan (which works perfectly for Thanksgiving turkeys too), and bought it from Amazon. It has a 5 star rating and you can click here to see the current price on Amazon.

Main Course Make-Ahead Tip:

Make the marinade the night before and cover the leg of lamb with the delicious marinade overnight. You’ll not only save time in the kitchen on Easter Day, but your lamb will be infused with the delicious mustard-garlic-thyme marinade.

Allow enough time for the lamb to roast, and to rest, before serving.

The lamb takes approximately an hour and twenty minutes to roast to medium rare. If you like your lamb cooked to medium (as I do) you will need to allow additional roasting time. After removing the lamb from the oven you will let it rest on a cutting board or platter to allow the juices to redistribute throughout the meat. While the meat is resting you will make the simple keto-friendly gravy using the pan juices, the extra marinade, dry sherry, and a little Dijon mustard.

Allow time for roasting, resting, and gravy-making when calculating your serving time!

Simple Spring Salad with Radishes, Mint & Sunflower Seeds by Giada de Laurentiis

I love this yummy Spring Salad from Food Network’s Giada de Laurentiis. It features crispy butter lettuce, thinly sliced radishes, sunflower seeds, and freshly grated Pecorino-Romano cheese. It’s tossed with a simple apple cider vinaigrette that can be made in advance. Your guests will love this salad and it’s a perfect, simple accompaniment to the rich, flavorful lamb.

Salad Make-Ahead Tip:

  • Both the salad and the vinaigrette can be made in advance, but store the salad and dressing SEPARATELY. Toss the salad with vinaigrette just before serving.

Cream of Asparagus Soup by Sunny Anderson

This easy and flavorful pureed asparagus soup screams “springtime” and is brought to you by Food Network host, Sunny Anderson. Just sauté onions and garlic in butter, add chicken stock and asparagus, and simmer until the asparagus is tender. Then puree the soup in a blender and stir in sour cream for a little bit of tangy creaminess.

If you’re fancy you can serve this as a soup course before the roast lamb or, if you’re more casual like me, just serve it alongside the meat and salad.

Soup Make-Ahead Tip:

Make the soup in advance. You can either reheat the soup and serve it warm, or serve it chilled.

No Sugar Cheesecake by Valerie Bertinelli

I thought I’d have a hard time finding a Food Network keto-friendly dessert, but Valerie Bertinelli to the rescue with this amazing No Sugar Cheesecake! The crust is a mixture of almond flour and pecans, and the filling is just like a traditional cheesecake with cream cheese, eggs, a tiny bit of lemon juice, and vanilla. It is sweetened with confectioners' erythritol sweetener (like Swerve) instead of sugar.

Garnish with fresh berries and mint leaves for an impressive and totally keto dessert. You can even add real whipped cream, sweetened with your favorite no-carb sweetener, or unsweetened.

Dessert Make-Ahead Tip:

  • Make the cheesecake a day in advance. Garnish with berries, mint leaves, and/or whipped cream when ready to serve.

Water with Strawberries Lemons Mint The Keto Minimalist.png

Enjoy a bold red wine, no-calorie iced tea, or water with lemon and strawberries.

If you’re a wine drinker, Cabernet Sauvignon pairs well with roast lamb, according to Decanter.com. A 5 ounce serving of cabernet has only 4 carbs.

If you’d rather skip alcohol, serve iced tea and/or water with fresh strawberries, lemon slices, and a few mint leaves.

I hope you enjoy this keto Food Network-inspired Easter menu. Who knows? After serving this tasty, traditional, low-carb meal to your family and guests, they’ll vote for you to be the Next Food Network Star!

Happy Easter and Happy Eating!
