What is brown butter?

Brown butter is simply butter that has been simmered long enough to allow all the water to evaporate, the milk solids are solidified and toasted to a delicious dark brown color. Browning the butter gives it a distinct sweet nutty, caramelized flavor that is unlike anything else.

Brown butter elevates the flavor of both sweet and savory dishes. It can be added to baked goods like (keto or traditional) cookies, cakes, and brownies, it is an excellent sauce for fish, chicken, and beef, and you'll love it drizzled on steamed or roasted vegetables.

 

What are Brown Butter Bites?

Brown Butter Bites are chilled, solid brown butter. They are eaten as a treat, like a keto fat bomb, to add fat into your diet or to eat just because they taste good.

Usually Brown Butter Bites are made with brown butter alone for a carnivore diet, but for a ketogenic or low-carb diet you can add additional ingredients like nuts, bacon bits, zero-calorie sweetener, and flavorings like vanilla or cinnamon.

Brown Butter Bites are also known as "Carnivore Candy," butter bombs, or keto fat bombs. (They're super yummy!)

Brown butter in general, and Brown Butter Bites in particular, are definitely keto-friendly. Since brown butter is butter that has been cooked long enough to toast the milk solids and has no additional ingredients, it is 100% fat.

On a keto or carnivore diet, people eat Brown Butter Bites or other types of "fat bombs" because they are high in fat and low in carbohydrates. This helps them maintain ketosis, a metabolic state in which the body burns fat for energy instead of carbohydrates.

Additionally, fat bombs can help people feel fuller for longer periods of time and provide a convenient source of energy.

I eat Brown Butter Bites because they taste good! For me, they are a satisfying, zero-carb way to end a meal. Kind of like a little keto treat to help signal "my meal is done." It's a yummy carnivore dessert.

I also use Brown Butter Bites to increase my healthy fats on days when I've been eating leaner cuts of meat. (I shoot for about 70% fat on a carnivore diet.)

 

What do you need to make Brown Butter Bites?

You only need 4 things to make delicious keto-friendly brown butter:

I recommend using unsalted butter to make Brown Butter Bites.

I recommend starting with unsalted butter when making Brown Butter Bites because you are better able to control the salt level. Browning salted butter concentrates salt in the yummy brown butter solids and if you are sensitive to salt they might taste overly salty to you.

If you don't have unsalted butter you definitely can make Brown Butter Bites using salted butter. I have my freezer stocked with salted butter so that's what I've always used and the results are fantastic, but I am a person who loves the taste of salt.

Use a stainless steel or light-colored skillet or saucepan, if you have one.

Using a pan or skillet with a light-colored surface will allow you to easily see when the milk solids begin to turn brown, so you don't overcook and burn your brown butter.

That said, you don't have to buy any new equipment. As a minimalist, all I own is one set of pots and pans and they are nonstick with a dark surface, but I've had great results making brown butter.  Just use a rubber spatula to stir your butter as it's browning and you can easily see the butter change color from yellow to brown.

Use food-grade silicone molds which will hold 1 to 2 tablespoons of liquid.

You can use fancy candy molds or plain ol' squares (like me!) but be sure that your molds hold about 1 tablespoon of liquid. If you track your fat on a carnivore or keto diet, it's easier to do when you know that each Brown Brown Butter bite is equal to 1 tablespoon of butter.

I use the 2 tablespoon Souper Cubes molds for many reasons.

  1. I already own them, so I don't need to purchase a fancy candy mold I'll rarely use.

  2. Souper Cubes have rigid bottoms so they don't flop around on the counter when you're pouring in the hot brown butter AND you can place them in the refrigerator or freezer right away.

  3. They have markings for both 1 tablespoon and 2 tablespoons so I can make small or large Butter Bites.

  4. Souper Cubes have a secure lid and the Brown Butter Bites can be stored right in the Souper Cubes).

  5. I use the 2-tablespoon size Souper Cubes to freeze other things like pesto, chimichurri, garlic herb butter, coconut milk, or tomato paste.

How many Brown Butter Bites will this recipe make?

Let's do some math!! (Sorry.)

This recipe uses 2 sticks of butter which is one cup of solid butter or 16 tablespoons of butter.

When the butter is heated and browned (and water evaporates) the volume reduces. So 2 sticks of butter yield 3/4 cup brown butter or 12 tablespoons.

If you use a 1 tablespoon silicone mold, you'll have 12 Brown Butter Bites. If you use a 2-tablespoon mold, the recipe will make 6 Brown Butter Bites. If you fill the 2-tablespoon mold in between the 1 tablespoon and 2 tablespoon markings, you will have 10 Brown Butter Bites.

If you add additional ingredients to your Brown Butter Bites (I show variations using bacon, coconut, and pecans) you will get more Bites than if you used brown butter alone because the other ingredients partially fill the molds.

If you use another size of silicone mold your mileage will vary.

The process couldn't be easier.

Cut 2 sticks of unsalted butter into even pieces and place in a skillet or saucepan over medium heat. I like to use a skillet so there is more surface area and the butter will melt faster. Have a 2-cup glass Pyrex measuring cup or heatproof bowl nearby.

The butter will melt and then begin to bubble and foam. Swirl the pan occasionally or stir with a spatula.

The milk solids will begin to caramelize, turn light, then darker brown, and sink to the bottom of the pan.

Continue stirring the butter until you begin to smell a delicious nuttiness. Yes, rely on scent to know when your brown butter is ready.

Be sure to watch the butter carefully as it begins the browning process.  You want delicious brown butter, not burnt butter.

When the milk solids are brown and the melted butter smells nutty and rich, remove it from the heat and pour it into a glass Pyrex measuring cup or heatproof bowl immediately. This will stop the cooking process so your butter does not burn.

Pour the melted brown butter into the silicone molds. Place a lid on the molds (if you have one) and freeze for an hour or until solid.

 
 

Tips for filling the Brown Butter Bites mold.

When you pour the liquid brown butter into the silicone molds you will notice that at first you'll just get liquid butter and the heavier solids remain in the button the Pyrex measuring cup.

I distribute the pourable brown butter evenly among the molds first.

I poured a small amount of butter in each of the 10 spaces in my Souper Cubes molds. Do the same for whatever silicone mold you are using.

Then, using a spoon, scoop a bit of the browned butter solid goodness from the bottom of your measuring cup and spoon it into each of the molds. The browned solids will sink to the bottom and you'll be able to distribute them much easier than trying to just pour the brown butter into the molds.

Now I’ve added the browned bits with a spoon. They will sink to the bottom of the mold. When you unmold, the lovely brown bits will be at the top!

How to store Brown Butter Bites.

Freeze Brown Butter Bites for up to 3 months in an airtight container.

You can either store the Brown Butter Bites in covered molds in your freezer or pop them out of the mold and keep them in a quart freezer bag or a freezer-safe container.

Ingredients

Instructions

  1. Cut butter into even chunks and place in a stainless steel or light-colored wide saucepan or skillet over medium heat.
  2. Cook, stirring frequently, until the butter begins to foam and bubble. When the milk solids turn golden brown and the butter has a delightful, nutty aroma, it is done. It will take approximately 5 to 10 minutes to brown the butter.
  3. Remove the pan from the heat and pour the brown butter into a glass Pyrex measuring cup or heat-proof bowl to stop the cooking process and prevent the brown butter from burning.
  4. Pour brown butter into heat-proof silicone molds. Using a spoon, distribute the butter solids evenly among the molds.
  5. Freezer for an hour or until solid.

Notes

You can use either salted or unsalted butter for this recipe. Salted butter does yield a slightly salty Brown Butter Bite which I like. If you are sensitive to the taste of salt, start with unsalted butter. You can always add a pinch of salt if you feel the Butter Bites are bland.
