It’s mid-April and I already have a mini herb garden growing on my patio. I love being able to snip fresh herbs and add them to my favorite keto meals.

One herb I never seem to use enough of is rosemary. It is such a hardy herb that it THRIVES, despite my total lack of a green thumb, Rosemary is fragrant, tasty, and and pairs well with beef, lamb, chicken, or veggie keto dishes.

It also has tons of antioxidants and compounds that help boost the immune system.

I was watching one of my favorite YouTubers - Guga Foods, who makes insanely entertaining videos on grilling steaks and burgers - and saw this video where he makes a super complicated compound butter using garlic, bacon, and smoked bone marrow. While I am sure it is WONDERFUL, I don’t have bone marrow, a smoker, nor the energy to make any recipe that involves massive amounts of time and money.

So I decided to apply a little minimalism juju to his concept and created my own delicious compound butter. I had rosemary from the garden, garlic cloves, and butter on hand.

And those are the only ingredients you need to make this keto super delicious fat bomb.

What is a compound butter?

A compound butter is simply softened butter combined with herbs, spices, and/or other flavorful ingredients, like honey, lemon or orange zest. Also, for the truly creative, exotic ingredients like bacon and smoked bone marrow.

How many carbs are in Rosemary-Garlic Compound Butter?

If you follow a keto or low-carb diet you will be happy to know there are zero net carbs in a serving of Rosemary-Garlic Compound Butter. The main ingredient is butter, and the fresh herbs and garlic add only trace amounts of carbs.

This is a true minimalist recipe in that the only equipment you really need are a knife to chop the garlic and rosemary, a bowl, and spoon to mix the ingredients.

A garlic press is optional.

I used my garlic press to quickly and easily crush the garlic which releases more of the juices and really infuses the butter with garlicky goodness. I use my garlic press all the time because it’s so much faster than mincing garlic with a knife and, best of all, you don’t have to peel the cloves first.

But you can definitely just mince garlic with a knife instead.

How to use Rosemary Garlic Compound butter on a keto diet.

Compound butter, like this one, are used to enhance flavors in many dishes, almost like a sauce. You are really only limited by your imagination.

Here are some delicious ways to use your Keto Rosemary Garlic butter:

  • Put on top of steak, or other grilled meats to add rich, decadent flavor. Rosemary pairs particularly well with beef, lamb, and chicken. (I like to put a piece of Rosemary Garlic Butter on my steak while it’s resting.)

  • Place a slice of compound butter on top of fish, like salmon, cod, or tilapia

  • Melt and serve as a dipping sauce for lobster or crab

  • Drizzle on top of roasted, steamed, or sauteed veggies

  • Use instead of plain butter to fry eggs

  • Rub a little softened butter under the skin of chicken prior to roasting

  • Butter your keto bread, and muffins

  • Use as a sauce or topping for zucchini noodles, spaghetti squash, or cauliflower rice.

You can substitute other herbs for rosemary in this keto compound butter recipe.

Unlike baking a cake where you must use certain ingredients in exact amounts for it to turn out correctly, compound butters are only limited by your imagination. You can easily substitute other fresh herbs for rosemary, use dried herbs, or combine herbs, add other seasonings like red pepper flakes or a squeeze of fresh lemon juice.

Here are some ideas for other keto-friendly compound butters.

  • Substitute dried rosemary for fresh. Use 2 teaspoons dried in place of 2 tablespoons fresh rosemary.

  • Combine rosemary with other fresh herbs like parsley, oregano, basil, or thyme.

  • Use another fresh herb instead of rosemary. Basil is my favorite, but consider using fresh chives, oregano, thyme, parsley, and even mint.

  • Skip the garlic if you don’t love it as much as I do.

  • Add a tablespoon of fresh-squeezed lemon juice to the recipe. Or, for a more subtle citrus flavor, add lemon zest.

  • Add a pinch of red pepper flakes.

  • Stir in a bit of horseradish for a flavorful compound butter!

If you don’t have fresh rosemary, you can substitute dried 2 teaspoons of dried rosemary.

I love using fresh basil for a really bright and fresh compound butter.

How to store Rosemary Garlic Compound Butter.

You can store the herb butter in the refrigerator or in the freezer.

Compound butter can be stored in the refrigerator for up to 5 days.

Wrap a log of Keto Rosemary Garlic Compound butter in a log and keep in the refrigerator for up to 5 days.

  • Spoon the butter onto a piece of waxed paper, form it into a log with your hands, and roll up with the waxed paper, and twist the ends shut.

Or scoop individual portions:

  • Scoop the butter onto waxed paper in 8 portions using a 1 tablespoon-sized cookie scoop. Chill in the refrigerator until firm and then place in a glass storage container.

 

Freeze compound butter for up to six months.

I love freezing Rosemary Garlic Compound Butter (or other flavored herb butters) in individual portions. I use the 2-Tablespoon size Souper Cubes to quickly and easily freeze the perfect portion size.

Simply scoop the softened butter into the Souper Cubes silicone freezer molds, put on the lid, and freeze an hour or two until the butter is solid.

Pop-out the perfectly sized cubes of herb butter and store them in a labeled freezer bag.

This is a simple recipe for a keto-friendly flavorful rosemary garlic herb butter to use on beef, chicken, fish, and veggies.

Ingredients

  • 1 cup (2 sticks) salted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1/2 teaspoon freshly ground back pepper, or more to taste

Instructions

  1. In a small bowl, mash together the butter, garlic, rosemary, and black pepper.
  2. Spoon Rosemary Garlic Butter onto a sheet of wax paper or parchment paper and form into a log. Twist the ends of the wax paper to seal and chill. When the compound butter is solid, it can be sliced into rounds.
  3. Or scoop individual portions of the Rosemary Garlic Compound Butter onto waxed or parchment paper using a small metal cookie scoop.
  4. When butter is solid it can be stored in a sealed container in the refrigerator for up to 7 days, or frozen for up to 6 months.
To Freeze Rosemary Garlic Butter
  1. Place chilled butter slices or scoops in a labeled freezer bag and store for up to 6 months.
  2. Or, scoop softened butter mixture directly into Souper Cubes 2-Tablespoon size silicone freezer mold. Place lid on the Souper Cubes tray and freeze until solid. Pop butter cubes out of the mold and store in a labeled freezer bag for up to 6 months.

Notes:

If you are using unsalted butter, add 1/2 teaspoon of kosher or sea salt, or to taste. If you don't have fresh rosemary, substitute 2 teaspoons of dried rosemary instead.
