My experience baking (and eating) Scotty's Keto Bread Mix.

Mixing and baking the bread is idiot-proof.

It couldn't be more simple to make. Just mix the ingredients, spread the dough in a pan (or use the 1-cup Souper Cubes as I did), let it rise for 2 hours, and bake for 25 minutes.

I remember watching my mom and grandma make homemade bread back in the day and it was an ordeal. Mixing and baking Scotty's Keto Bread Mix was super easy. No "my superpower is baking" apron required.

Scotty's keto bread tastes like REAL white bread.

I couldn't wait to slice a warm piece of bread when I baked my first loaf. It tastes exactly like pillowy soft white bread. I may have shed a tear of happiness.

I have never found a keto bread that was anything like real bread before.

It is soft and spongy and smells just like a fresh-baked loaf of bakery bread. The flavor, texture, and smell are spot on.


I begrudgingly gave my husband (who doesn't eat keto) a slice to test his reaction. We keto eaters sometimes get used to low-carb bread or cereal or other substitutes and I wanted an honest opinion.

That's definitely more than I would like to spend on keto bread, BUT it is worth the splurge.

I baked my bread in four mini loaves and immediately put three of them in the freezer. I knew if I had all four loaves sitting on the counter I'd eat it all in a weekend. (Freezing did not affect the quality of the bread at all.)

My baking/storing bread tips:

  • Grease your pan with real butter. It makes the edges even yummier!

  • Definitely spread your dough evenly in the pan with a butter-coated spatula like the instructions say. I used my fingers and that's why my first loaf is kind of lumpy looking on top. It didn't affect the flavor, texture, or anything else. It's just not the prettiest loaf I've ever seen.

  • If you're not feeding a family, consider slicing and freezing some of your keto bread. You can always pull out a slice or two at a time and pop it right in the toaster.

  • I eat some keto sandwiches open-faced. It gives me the bread experience and helps my loaf of keto bread last longer.

How to bake Scotty's Keto Bread in 5 simple steps.

I don't mind spending time on a recipe but, being a minimalist, I prefer when things are simple. Baking homemade keto bread couldn’t be simpler with Scotty’s Everyday mix.

  1. Dissolve yeast in water and add olive oil.

  2. Add Scotty's Keto Bread Mix and mix for 2 minutes.

  3. Place the batter in a pan. (I like to use my 1-cup Souper Cubes for 4 small individual loaves.)

  4. Let the dough rise for 2 hours.

  5. Bake for 25 minutes.

There is no guesswork, no kneading, and every loaf comes out perfectly done with no soggy bottoms! (Do you hear me, Great British Bake Off?)

People love bread!! Bread is a part of every culture and likely most of us grew up eating sandwiches, peanut butter toast, French toast, and rolls with Sunday dinner.

Bread tastes good, it's filling, but oh the carbs!

A typical piece of white bread has about 15 grams of carbs which is close to the number of carbs many keto eaters eat in one day.

I've tried to like low-carb bread made with almond flour or coconut flour but they are often dense and don't have the same texture, taste, and smell as "real" bread. I found it easier just to go without.

A quick look at the nutrition facts might lead you to believe one slice has 1 net gram of carbs - which is still amazingly keto. Because not all carbs are created equal, dietary fibers and some sugar alcohols can be subtracted from the total amount you consume.

  • Toast with butter, peanut butter, almond butter

  • Avocado toast (I'm crying with happiness)

  • Cinnamon toast - use zero carb sweetener and cinnamon

French toast and use your imagination for keto-friendly toppings:

  • butter (obviously)

  • keto pancake syrup

  • Swerve or other low-carb confectioner's sugar

  • homemade blueberry sauce (I don't mind spending a few carbs on nutrient-packed berries)

  • toasted pecans, walnuts, or slivered almonds

  • warm coconut butter and drizzle on top

  • no-sugar-added peanut butter, almond butter, or other nut butters

  • cream cheese and sprinkle with cinnamon

You could also go savory and use herbed butter like this Rosemary Garlic Compound Butter recipe. It’s easy to make and delicious!


Keto-Friendly Sandwiches

There are a million combinations of meats, spreads, fresh veggies, and nut butters to explore! You probably already have your favorites but don't forget to use Google or Pinterest for inspiration. You can use the bread as-is, toast the bread, or "grill" your sandwich in a panini press or nonstick skillet.

  • peanut butter or your favorite nut butter and keto-friendly strawberry jam

  • roast beef with horseradish, red onion, and spinach

  • chicken salad (I like straight-up chicken in a can mixed with mayonnaise, but I'm extra that way)

  • egg salad

  • grilled cheese

  • BLT

  • Reuben sandwich with corned beef, sauerkraut, swiss cheese, and keto-friendly Thousand Island dressing

  • DIY subs with cold cuts, lettuce, thinly sliced onions and tomato, black olives, drizzled with sub sauce or Italian dressing

  • ham and cheese with some stone-ground mustard

  • tuna salad
