Hot and Zesty Keto Reuben Dip
OMG I <3 this recipe so much. Almost every day I eat veggies and keto dip for a snack and this delicious dip is filling, high in fat, and tastes amazeballs.
1 (8 oz) package cream cheese, softened
1/2 cup sour cream
8 oz corned beef, diced
1 cup shredded Swiss cheese
1/2 cup sauerkraut, drained
1/4 cup Thousand Island dressing (use store-bought or homemade)
1 tablespoon caraway seeds
pork rinds or veggies of your choice for dipping
Press the sauerkraut between paper towels to remove most of the liquid. Combine sauerkraut with all remaining ingredients except for dippers. Mix well.
To serve cold: That’s it! Serve as-is with veggies and pork rinds.
To serve hot:
MICROWAVE - Spoon dip into glass pie plate or microwave-safe bowl and microwave for 2 minutes on high.
BAKE - Spoon dip into glass pie plate or oven-safe dish and bake at 400 degrees for 15-20 minutes until hot and bubbly.
STOVETOP - Cook over medium heat until heated through.
CROCKPOT - Cook on high for 2 hours or low for 4 hours.
