Is quiche keto?

Traditional quiche, baked in a pastry crust, is high in carbs and not suitable for a keto diet. The crust is the main source of carbs, but vegetables, cheese, and other ingredients will affect the carb count. Homemade quiche with crust may be lower in carbs than store-bought quiche, which range from 11 to 27 grams of net carbs per serving.


Quiche purchased from stores like Trader Joe's and Whole foods are high in carbs and not suitable for a keto diet.

I looked at some quiche brands from popular stores to check out their carb counts:

  • Trader Joe's sells a Quiche Lorraine with 11 grams of net carbs per serving. It's not super low in carbs, but can be a part of a keto diet if other food choices for the day are high fat and low carb.

  • Whole Foods sells a Quiche Lorraine and Broccoli Cheddar Quiche, both with 27 grams of net carbs per serving.

  • La Terra Fina Spinach Artichoke Quiche, sold at Costco, has 23 grams net carbs per serving.

  • Farm Ridge Foods Spinach Quiche Florentine, sold at Walmart, has 24 grams net carbs per serving.

Always read the nutrition facts of a purchased crust to see if it will fit with your keto lifestyle and goals.

Homemade quiche with a crust may be lower in carbs than store-bought.

If you make homemade quiche and use a crust, you can more easily control the carb count.

A Pillsbury frozen pie crust has 9 grams of carbs for a 1/8 portion or the amount in one standard slice of quiche. The only other source of carbs in quiche are any vegetables or other ingredients added to the pie.

If you use my recipe for Bacon Gouda Crustless Quiche and bake it in a Pillsbury frozen pie shell, it will have 11 grams net carbs per serving.

Crustless quiche is usually keto-friendly.

Baking a quiche without a crust drastically reduces the number of carbs and results in a keto-friendly quiche.

This recipe for Bacon Gouda Crustless Keto Quiche recipe has only 2 grams net carbs per serving.  Adding low-carb vegetables like spinach, asparagus, or mushrooms will only increase the carb count slightly.

Use your best judgment when determining if a crustless quiche is keto-friendly and there is no nutrition information available. If you see a recipe for "loaded baked potato quiche" you can assume it is higher in carbs from starchy potatoes.

Any quiche recipe can be made crustless.

It is easy to take any quiche recipe and turn it into a crustless quiche. Simply skip the crust! Just be sure to grease your pie plate well before baking so the quiche mixture doesn't stick to the pan.

How many carbs are in crustless quiche?

To find the carb count for a crustless quiche recipe, check the nutrition information included with the recipe. Just search for "keto crustless quiche" or use this recipe! You can easily swap out other fillings for the crispy bacon and Gouda cheese.

Can you freeze crustless quiche?

Quiche freezes beautifully and I’ve included freezing instructions for a whole crustless quiche, or individual portions.


Freezing a whole crustless quiche.

You can easily freeze crustless quiche either whole, or in individual portions. Allow the quiche to cool completely before freezing. Wrap the quiche (or slice) in plastic wrap, and then wrap again in aluminum foil. 

Freezing individual crustless quiches, or slices.

I like to bake and freeze individual portions right in my 1-cup Souper Cubes. Allow to cool and then pop on the lid and freeze until solid. You can either leave them in the Souper Cubes tray, or remove them and place in a zipper freezer bag.

You can also slice the quiche into individual portions. Wrap each slice in plastic wrap, place on a cookie sheet, and allow to freeze solid. You can then place the individually wrapped slices in a large freezer bag.

How to reheat crustless quiche.

Allow the quiche (either whole, individual slices, or individual quiches) to thaw in the refrigerator overnight before reheating.

Reheating a whole quiche:

  • preheat the oven to 350 degrees

  • place the thawed quiche back in the original pie plate or baking dish

  • cover lightly with foil

  • bake for 20 minutes, or until heated through

Reheating individual quiches or slices:

  • place the thawed individual quiche or slice on a microwave-safe plate

  • cover lightly with a paper towel

  • microwave at 50% power for 2 to 3 minutes or until the desired temperature (quiche can be served warm or hot, it's  your preference)

Bacon Gouda Crustless Keto Quiche

A zillion years ago I had a xerox copy of a Quiche Lorraine recipe and this is my keto adaptation of that recipe. It is delicious served warm or cold and can be eaten any time of day.

It is a good base recipe because you can easily choose a different protein for the bacon, choose a different type of cheese, and even add low-carb veggies like asparagus or mushrooms.

 

What to serve with crustless keto quiche?

For a quick breakfast just serve a slice with water or your favorite coffee.

Bacon Gouda Crustless Keto Quiche

Super simple crustless Keto Quiche recipe that is perfect for breakfast, lunch, or dinner! This recipe features the delicious flavors of bacon and Gouda for a fantastic (and minimalist) keto meal.

Ingredients

  • 4 eggs
  • 1 cup heavy cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon black pepper
  • 8 slices bacon, cooked and broken into bite-sized pieces
  • 5 oz Gouda cheese, shredded

Instructions

  1. Preheat oven to 350 degrees.
  2. Butter glass pie plate and set aside.
  3. In mixing bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg.
  4. In pie plate, sprinkle half the cheese and half the bacon, then repeat to make a second layer.
  5. Pour egg mixture over the top.
  6. Bake at 350 degrees for approximately 40 minutes until eggs are set in the middle and the top is golden brown and puffy.
  7. Let cool a few minutes and then slice into pieces.
